3ds max(vray) and zbrush

hello guys! well im creating a popsicle like magnum (ice cream) , with 3ds max and zbrush, but now i'm starting the texturing, and i struggle on the texture of the chocolate, because there is variation in the chocolate on the popsicle and there a nuts too on the model, i want to have the same effects as the picture here , you can see that the color of the chocolate is not uniform, and also how to do the nuts and include them in the texture?
